The Lodge at Torrey Pines’ A.R. Valentien restaurant has a long history of satisfying its guests’ sweet tooth and the new Pastry Chef Elena Palma, has been named to carry on the tradition. A.R. Valentien has been named one of “America’s Top Restaurants” by Zagat Guide and one of the “Top 10 Farm-to-Table Restaurants” by Epicurious.com. Palma has trained in both Europe and the U.S., and has spent the last three years under the tutelage of Jennifer Costa, whom she succeeds. Prior to working at the esteemed Torrey Pines restaurant, Palma was pastry assistant under Chef Jack Fisher at Jack’s La Jolla. In her new role, Palma will be creating innovative desserts using classic recipes and seasonal ingredients for the wide array of desserts that A.R. Valentien offers.
