Dario Correa has been newly appointed Executive Chef at the Mayfair Hotel & Spa in Miami. In his new role, Correa will oversea catering and banqueting services as well as in-room dining and the menu at the hotel's Italian restaurant, Spartico. Born and raised in Argentina as the child of Italian immigrants, Correa's cuisine is largely influenced by his heritage and training in Italian cooking. Correa has trained under Ted Mendez, celebrity-personality chef Eric Ripert, and French-native chef Claude Troisgros.
“I am excited to bring my creativity and roots to an inspired trattoria as Spartico where the authentic simplicity of the food is highlighted in every single detail of the dishes,” said Chef Dario Correa. “I like the (pureness/genuineness) of rustic authentic cooking; it pleasures the palate and warms the soul.”
